One of my favorite things to make in the slow cooker? Lentil and vegetable stew. It’s so easy, packed with flavor, and freezes well, so I’m covered for dinner and some.

Plus, it’s a great way to sneak in extra veggies and plant-based protein. Win-win, right? 🌱
