May Round-Up: Easy Meals, Fresh Ideas, & Latest News

Hey Reader,

I know life gets busy, so I’m here to make mealtime easier! This month, I’m rounding up my latest recipes, meal planning tips, and resources to help you save time, reduce stress, and enjoy delicious vegetarian meals.

🌟 Featured Recipe: Jackfruit Buffalo Dip

Summer holiday gatherings are coming up. This screams for a yummy, gooey dip you can share with a crowd.

This easy recipe uses canned jackfruit and lots of cheese; buffalo sauce is optional, but highly recommended!

Bring along some carrots and celery sticks and some pita chips, and you're ready to go!

Leftovers (if there are any) are also fantastic as a quesadilla filling!

🍴 Meal Planning Tip of the Month

Batch-Cook Versatile Veggies

Roast a tray of broccoli, sweet potatoes, or peppers to use in wraps, bowls, or salads all week. It cuts down on dinner stress and reduces food waste.

📢 What’s New?

I've been testing a recipe to batch-cook breakfast, my least favorite meal to cook daily. If I ever get around to taking pictures of it, that post will be up soon!

I've also been gathering ideas from other awesome bloggers and will share that soon as well.

If you're following me on Facebook or Pinterest, you'll see them pop up there when they're done!

This video is gorgeous in a way that I could never create. Just remember that while she served it with pasta or rice, this recipe needs some protein to balance out a complete meal.
