Hey friend,

Ever get to the middle of the week and just… stare at your fridge, wishing dinner would magically appear? 😅

Yeah, me too.

By Wednesday or Thursday, my inspiration usually run dry, and the idea of cooking an elaborate meal feels like an Olympic event I didn’t sign up for.

But here’s the thing: dinner doesn’t have to be complicated to be delicious. Sometimes, the best meals are the ones that are quick, easy, and leave you with fewer dishes (let’s be honest, that’s the real goal, right?).

So, if you’re feeling the midweek meal burnout, I’ve got some go-to ideas for you that will save you time and keep your family (and yourself!) well-fed and happy.

Bonus: no one will even realize how easy they were to make. 😉

​Sheet Pan Dinners to the Rescue

This is my personal favorite because it’s literally one pan. Toss everything in, and let the oven do the work.

Veggies, tofu or tempeh, some olive oil, and your favorite spices—done! Throw in some baby potatoes or sweet potatoes, and you’ve got a whole meal with almost zero effort. It’s like magic.

One-Pot Wonders

If you’re not on the one-pot meal train yet, let me introduce you to your new best friend. Think veggie-loaded pasta dishes, hearty soups, or even a vegetarian chili.

Everything cooks in one pot, flavors meld together, and there’s only one thing to clean at the end. 🙌

This one requires a bit more finesse than a sheet-pan dinner, as you have to make sure you get the liquid-to-carb ratio right if you're not using a separate dish to cook them.

Leftovers = Life-Savers

Look, sometimes it’s okay to admit we don’t need to cook a whole new meal every night.

Get comfy with making a bigger batch of something earlier in the week and repurposing the leftovers. That veggie stir-fry from last night? It can totally become a wrap or burrito filling the next day.

Or, mix it up and throw it into a salad. Same dish, new twist.

My favorite way to repurpose leftover protein is to add it to a baked potato!

Lazy Tacos

Need dinner in 15 minutes? Tacos are always a win. Warm up some beans, toss in leftover veggies, sprinkle with cheese or avocado, and boom—dinner. And don’t forget the hot sauce for some extra flair. 🌮🔥

Midweek doesn’t have to be hard, and you deserve a break. Give these easy ideas a try, and I promise, you’ll make it to Friday without feeling like your kitchen is your second job.

And nothing's wrong with the occasional pizza stop on the way home, either!
