I’m going to keep this short and sweet today because I know we’re all feeling the holiday rush (anyone else getting a little overwhelmed already? 🙋‍♀️).

First of all, I want to say THANK YOU.

Thank you for being a part of my community, supporting me, and showing up with kindness and openness. I'm so grateful for you all, and I’m sending you lots of gratitude as we head into the holiday season. 🌟

But before we all dive headfirst into the holiday madness, I wanted to share something simple and nourishing with you today. After all, the holidays are all about taking time to slow down, reflect, and enjoy the little things.

Thanksgiving Recipe: Simple & Cozy Vegetarian Stuffing 🥖

We’re keeping things super simple today. I know a lot of us like to keep things cozy, so here’s a twist on the classic Thanksgiving stuffing that’s easy to make, totally vegetarian, and super comforting.

Ingredients:

  • 1 loaf of hearty bread (I like whole-grain or sourdough)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable or mushroom broth
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon sage (dried or fresh)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Tear the bread into small chunks and toast it in the oven until golden, about 10 minutes. Alternately, leave the bread out overnight to go stale.
  3. While the bread is toasting, heat olive oil in a large skillet over medium heat. Sauté the onion, celery, and garlic until softened, about 5 minutes.
  4. In a large bowl, toss the toasted bread with the sautéed veggies, broth, parsley, and sage. Season with salt and pepper.
  5. Transfer everything to a baking dish and bake for 20-25 minutes, until crispy on top.
  6. Serve and enjoy! Your guests will be wondering if this is your secret family recipe. 😉

Mindfulness During the Holidays ✨

Speaking of family recipes, as we head into the holiday season, it’s easy to get caught up in the hustle and bustle—and forget to take a breath.

Mindfulness can make all the difference, and one simple practice I encourage is to eat breakfast. 😅

Starting your day with a nourishing meal not only gives you energy but also helps set a calm tone.

Plus, when you’re feeling nourished, it’s easier to approach the rest of your meals with gratitude and mindfulness. This means you get to enjoy the meal AND your family afterward!

So, whether it's a smoothie, oats, or toast with avocado, make sure you take those first few moments to refuel and set yourself up for a peaceful day ahead.

A Reminder to Take Care of You 🧖‍♀️

I know how busy things can get (especially around the holidays), but it’s important to carve out time for YOU.

Maybe that means saying no to an extra project at work, taking a walk outside, or simply enjoying a cup of tea in peace. Rest is not just for the weekends—it’s essential all year long.

So please remember to take a moment for yourself when things get overwhelming. You deserve it.
